Quarantine Quickies: 5 Easy Air Fryer Dishes

If you have been following me for some time, you’ll realize I’ve become obsessed with my air fryer. I don’t even know how I got sucked this far in. Around the holidays, my girlfriend asked me if I wanted to purchase an air fryer from her, since she received two for Christmas. Sure, why the hell not. I’ve got nothing better to do with my money, than to purchase a kitchen appliance I know nothing about.

I wanted to keep it simple for my first air fryer experiment. Chicken wings. How could I possibly mess that up?! 25 minutes later and I was in heaven. How could this machine produce such crispy, tasty, and semi-healthy results? I don’t know and I don’t care…I’m sold!

So many of you have DM’d me asking what to use the air fryer for, so I’ve compiled my top 5 air fryer quickies. Try them out for yourself, tag me and use the hashtag #MMQuickMeals.

I use the Instant Vortex Air Fryer, and you can usually catch it on sale!

Disclaimer: I am not a chef, nor do I measure my ingredients (just shake to your liking), so just follow along with me or send me a note if you need more details!

Chicken Wings:
Prep Time: 5-10 minutes
Cook Time: 20-25 minutes
Air fryer setting: Air fry

Ingredients:
• 2 lbs. of chicken wings
• Cooking spray (I prefer olive oil)

Seasoning (whatever you would normally season your wings with)

1. Clean and season your chicken as you normally would.
2. Pre-heat air fryer to 385 degrees and spray air fryer tray with cooking spray.
3. Once the air fryer instructs you to add food, assemble the chicken wings in the air fryer tray and let them cook for 12-15 minutes.
4. After the initial 12-15 minutes, check your wings and make sure they’re to your desired crisp level.
5. Flip over for another 5-10 minutes and you’re done!

Salmon filet:
Prep time: 5-10 minutes
Cook time: 20 minutes
Air fryer setting: Air fry

Ingredients:
• 1 1/2 lbs. of fresh salmon filet
• Cooking spray (I prefer olive oil)
• Seasoning (whatever you would normally season your salmon with, but I also highly recommend the Chef Paul Prudhomme’s Magic Salmon Seasoning)
• Minced Garlic
• Garlic butter (whichever one you can find at your local grocery store)

1. Clean and season your salmon as you normally would and add minced garlic to the top of your filets.
2. Pre-heat air fryer to 385 degrees and spray the air fryer tray with cooking spray.
3. Once the air fryer instructs you to add food, assemble salmon portions into basket (do not crowd basket).
4. Let salmon cook for 15 minutes and then add the garlic butter on top for the remaining 5 minutes.
5. Enjoy!

Roasted Brussel Sprouts

Cook Time: 10 minutes
Air fryer setting: Roast

Ingredients:
• Brussel sprouts
• Olive oil
• Balsamic vinegar
• Pink Himalayan Sea Salt
• Black Pepper
• Minced Garlic
• Garlic Powder
• Onion Powder

1. Wash and cut Brussel sprouts in halves.
2. Pre-heat air fryer to 350 degrees.
3. Toss washed Brussels with all the ingredients (minus the Pink Himalayan Sea Salt) and olive oil, making sure each sprout is coated.
4. Place in air fryer for 7 minutes, toss around and leave for remaining 3 minutes.
5. Remove from air fryer basket and sprinkle Pink Himalayan Sea Salt
6. Enjoy!

Chicken Tenders
Prep Time: 15 minutes
Cook Time: 20 minutes
Air fryer setting: Air fry

Ingredients:
• Chicken Tenderloins
• Seasoning
• Egg
• Buttermilk or Heavy Cream
• Breadcrumbs
• Cooking spray (I prefer olive oil)
• Olive Oil

1. Clean your chicken tenderloins as you normally would.
2. Pre-heat air fryer to 400 degrees and spray the cooking tray with cooking spray.
3. Mix all your dry ingredients in a bowl and whisk your egg and buttermilk or heavy cream in a separate bowl.
4. Pat dry the tenderloins and coat them in the egg wash first, then dip them in the seasoned bread crumb mixture.
5. Assemble tenderloins in air fryer and brush the top of the tenderloins with olive oil. Be sure not to overcrowd the basket. I would only do about 4/5 at a time, depending on the size of your air fryer.
6. Cook for 8 minutes, and flip for another 8 minutes (10 if you like them extra crispy).
7. Dip them in your favorite dipping sauce and enjoy!

Roasted Truffle Potatoes
Prep Time: 10 minutes
Cook time: 20 minutes
Air fryer setting: Roast

Ingredients:
• Bag of red potatoes
• Black pepper
• Pink Himalayan Sea Salt
• Olive oil
• Garlic powder
• Onion powder
• Minced garlic or garlic paste
• Truffle Oil

1. Scrub and cut the potatoes. Place in a bowl.
2. Pre-heat air fryer to 400 degrees and spray tray with cooking spray (be sure the setting is on roast).
3. Season potatoes with all ingredients (except for the Pink Himalyan Sea Salt) listed above and drizzle with olive oil. Stir it around to make sure all pieces are coated.
4. Place potatoes in the air fryer basket (it is fine for the basket to be crowded with potatoes).
5. Let potatoes roast for 20 minutes, tossing at the 10-minute mark
6. Remove from basket and toss with Pink Himalayan Sea Salt and drizzle with truffle oil.
7. Enjoy!

I’ve been meaning to get an air fryer for a while now. I’m sooooooo over cooking so this is next on my list of stuff to buy (I swear Amazon is going to shut me out, I been shopping so much during quarantine). Anything to limit my time standing in front of the stove.
